Kobori Shuzoten has been brewing Manzairaku in Hakusan City, Ishikawa Prefecture since 1716, in the foothills below Mount Hakusan in one of Hokuriku's established sake districts. The name references manzairaku, a celebratory court music piece, and was chosen to evoke festivity and abundance for those who drink it. The brewery uses snowmelt water from Hakusan as its brewing water and works with several rare rice varieties, including the Hokuriku No. 12 variety available to only two breweries in Japan and Ishikawa-mon, grown exclusively within the prefecture.
