Kuninokotobuki is produced by Yanagawa Shuzo, founded in 1890 in Yanagawa City, Fukuoka Prefecture, a city of canals in the heart of Chikugo's rice-growing country. The brewery works with 100% Fukuoka-grown Yamada Nishiki rice and draws its brewing water from the mineral-rich alluvial subterranean flows near the Chikugo River estuary, a water source naturally low in iron and well suited to fermentation. Under the motto of persevering rather than cutting corners, Yanagawa Shuzo has maintained handcrafted production methods across more than 130 years.
