Kimbo

Kinpo Shuzo was founded in 1869 in Yasugi City, Shimane Prefecture, a region considered the birthplace of Japanese sake, and the brand name Kimbo derives from the phoenix of Chinese legend, a creature said to make any spring it gazes upon flow sweet. Now in its sixth generation, the brewery centers its philosophy on umami as the defining characteristic of sake, crafting each batch for fruity aromatics, rice-forward savory depth, and a light finish. Shimane's identity as the origin of Japan's brewing tradition informs the brewery's regional motto: Yamatoo Daisen, sake is Kinpo.
