Kasumi Tsuru
Founded in 1725 in the coastal village of Kasumi on the Sea of Japan in northern Hyogo Prefecture, Kasumitsuru Brewery is named after its hometown and stands as one of Tajima's most historically significant producers. The brewery is exceptionally rare in that it brews exclusively using kimoto and yamahai methods — the most labor-intensive traditional fermentation techniques — a practice maintained uninterrupted for nearly three centuries.
