Takeuchi Shuzo, established in 1872 in Konan City, Shiga Prefecture, has long been known for Kanoizumi — a sake once nicknamed the silent sake because those who loved it refused to share word of its quality with others. Since 2020, the brewery has pioneered a world-first brewing method using antioxidant hydrogen-reduced water, producing sake that resists oxidation and has attracted international attention.
