Izutsucho is the traditional brand of Kurosawa Sake Brewery, founded in 1858 in Nagano Prefecture, where the name refers to the guardian of the well, honoring the brewery's deep-well water drawn from the Chikuma River groundwater system. The brewery practices kimoto-zukuri throughout its Izutsucho range, a method that takes twice as long as modern approaches but yields full-bodied sake with depth and a well-integrated balance of sweetness, acidity, and umami.
