Ishizuchi

Ishizuchi Shuzo was founded in 1920 in Saijo City, Ehime, and named after Mt. Ishizuchi, the highest peak in western Japan, a mountain long venerated as a sacred site. Saijo City has been celebrated as a town of famous water since ancient times, and the brewery's own well yields ultra-soft water that has been recognized twice as the best drinking water in Japan by the national environmental agency. The brewery is family-operated with four members brewing all sake by hand, with particular focus on box-koji production and long, low-temperature fermentation, guided by the philosophy sake that comes alive at the table.
