Fukurokuju Shuzo, founded in 1688 during the Genroku era, has been brewing sake in Gojome-cho, Akita Prefecture for over three centuries, drawing on local rice, water, and the cold northern climate. The Ippaku Suisei brand was introduced in 2006 by the sixteenth-generation owner Koei Watanabe, with the name meaning white rice and water become the most delicious sake written in four kanji characters. The brand is characterized by a light and smooth profile and uses medium-hard groundwater that springs up within the brewery itself, producing sake that is both crisp and aromatic.
