Hatsukame
Hatsukame Sake Brewery, founded in 1636 in what is now Fujieda City, Shizuoka Prefecture, is recognized as the oldest sake brewery in Shizuoka, operating under the original trade name Ashinaya. The brewery name Hatsukame was chosen to evoke the brightness of the first sunrise and the longevity of the turtle, reflecting the ambition of each new season. Brewing slowly at low temperature with underground water from the Southern Alps and carefully selected local rice, Hatsukame pursues a gentle, low-acidity flavor that expresses more than 380 years of Shizuoka brewing tradition.
