Kojima Sohonten, founded in 1597 in Yonezawa City, Yamagata Prefecture, is among Japan's oldest operating breweries and served for centuries as exclusive sake purveyor to the Uesugi samurai clan. Now managed by the 24th generation of the Kojima family, the brewery achieved carbon-neutral certification, generating power from sake lees, making it one of the first breweries in Japan to do so. The Ginga label, part of the Toko brand family, showcases the brewery's pursuit of refined, delicate premium sake drawing on pristine snowmelt water from the surrounding mountains.
