Chooroku is produced by Ouroku Shuzo, a small brewery founded in 1872 in Matsue City, Shimane Prefecture, whose name derives from an ancient Chinese expression describing sake as the beautiful blessing from heaven. The brewery adheres to six strict self-imposed standards for every release: no carbon filtration, raw or minimally pasteurized filling, bottle storage, no blending, limited production, and distribution kept at minus-five degrees Celsius to preserve what the brewery calls living sake. All products are unfiltered and handled with extreme care to retain their natural, living character.
