Chiyogiku Co., Ltd. has been brewing in Hashima City, Gifu, since 1738, and renamed its flagship brand from Usumomiji to Chiyogiku in the mid-19th century at the time of the Black Ships crisis, combining the Japanese characters for thousand generations and the chrysanthemum, a symbol of Japan, to express a wish for the nation's enduring prosperity. The brewery uses Yamada Nishiki from verified organic sources and soft water drawn from the underground flow of the Nagara River, holding the philosophy that sake is not manufactured but nurtured, and that the brewer's role is to create the right environment for yeast and koji to work. The range spans daiginjo to sparkling and cooking sake.
