Hamakawa Shoten launched the BIJOFU brand in 1991, naming it after the image of Sakamoto Ryoma, the celebrated Kochi-born patriot of the late Edo period, as an embodiment of a beautiful, fine man. Brewed in Kochi Prefecture using soft underground water drawn from the Nahari River, a technically demanding water source that requires precision to coax clean flavors from, BIJOFU has earned a reputation across Japan and internationally for clear, well-defined sake. The brewery's commitment to expressing the full flavor of rice through this challenging water source defines the refined, crisp character of the brand.
