Chinjao Rosu is a popular Chinese style stir fry made with tender pork, crisp green peppers, and bamboo shoots. The pork is marinated with soy sauce and sake, then coated with potato starch to keep it juicy and tender as it cooks.

The combination of oyster sauce, soy sauce, mirin, and sake creates a rich, savory sauce with just a hint of sweetness. Finish everything quickly over high heat to keep the vegetables crisp and give the dish that irresistible stir fried aroma. It’s an easy, satisfying dish that pairs perfectly with steamed rice.

What you'll need

  • 300 g pork
  • 3 green bell peppers
  • 1 pack boiled bamboo shoots
  • 1 tbsp soy sauce
  • 1 tbsp cooking sake
  • 1 tbsp potato starch
  • Sesame oil, as needed
  • Salt and pepper, to taste

  • 1 tbsp mirin
  • 1 tsp soy sauce
  • 1 tsp sugar

How to make it

Cut the pork into thin strips and place in a bowl. Add 1 tbsp each soy sauce, cooking sake, and potato starch. Mix well and marinate for 10 to 20 minutes. Remove the seeds and white membranes from the green peppers and cut into thin strips. Cut the bamboo shoots into thin strips or bite sized pieces.

Heat sesame oil in a frying pan over medium heat. Add the marinated pork and let it cook undisturbed until lightly browned. Turn the pork over and separate the pieces, then add the green peppers and bamboo shoots. Stir fry until the pork is cooked through.

Add 1 tbsp each oyster sauce, cooking sake, and mirin, followed by 1 tsp each soy sauce and sugar. Turn the heat to high and stir fry quickly until everything is evenly coated with the sauce. Transfer to a plate and serve.

Tips

  • Coating the pork with potato starch helps lock in moisture, keeping the meat tender and juicy while stir frying.
