Hitakami Daiginjo é produzido pela Hirako Shuzo, fundada em 1861 em Ishinomaki, Miyagi, próxima à costa de Sanriku. Utilizando arroz Yamada Nishiki polido a 40% e água local de qualidade, o sake alcança o perfil delicado e altamente aromático esperado do grau daiginjo, com o final limpo e refinado que traduz a filosofia da cervejaria de harmonizar com a gastronomia.
