Miyakoshibori Daiginjo usa Iwai, o histórico arroz de sake de Kyoto, prensado pelo método miyakoshibori na cervejaria Gekkeikan em Fushimi, fundada em 1637. A água mole de Fushimi e o caráter rico e robusto do grão de Iwai produzem um daiginjo encorpado, com complexidade profunda e em camadas, enraizada na tradição de produção de sake de Kyoto ao longo de 400 anos.
