O arroz Nippon Bare polido a 70% é fermentado pelo método yamahai na Uehara Shuzo, na prefeitura de Shiga. O yamahai da Uehara, produzido sem ácido lático comercial, é prensado em uma das apenas duas prensas de alavanca de madeira (tenbinshime) ainda existentes no Japão, resultando em um sake rico e encorpado, com acidez firme que se destaca quando aquecido.
