Fermentado com fermento selvagem cultivado internamente e prensado ao longo de três dias pelo método kioke tenbin de barrica de madeira, este junmai ginjo da Uehara Shuzo carrega a riqueza característica e a textura sedosa da abordagem tradicional da cervejaria. Fundada em 1862 em Shiga, a cervejaria prioriza a atividade microbiana natural em detrimento de fermento ou ácido lático adicionado.
