Yamada Nishiki é a base deste sake no estilo yamahai da Uehara Shuzo, em Shiga, produzido com fermento selvagem cultivado internamente e prensado pelo raro método kioke tenbin de barrica de madeira. Produzido sem ácido lático comercial ou fermento adicionado, reflete toda a intensidade do yamahai jikomi tradicional: denso, complexo e de estrutura firme.
