O arroz Tama Sakae da região de Shiga passa pela fermentação em barris de madeira (kioke) no estilo yamahai na Uehara Shuzo, revivendo um método que ficara inativo na cervejaria por mais de meio século. O namagenshu é engarrafado sem filtragem, pasteurização ou diluição, preservando o calor e o umami suave conferidos pelos barris de cedro junto com a profundidade da fermentação yamahai.
