Yamada Nishiki é a base deste namagenshu junmai ginjo da Uehara Shuzo, em Shiga, produzido sem pasteurização ou diluição e prensado pelo método kioke tenbin da cervejaria, uma técnica de prensa de barrica de madeira mantida por menos de seis cervejarias no Japão. O fermento selvagem cultivado pela própria cervejaria e a tradição yamahai conferem ao sake seu corpo característico e sua frescura vívida.
