A Ena Jozo, fundada em 1818 na cidade montanhosa de Nakatsugawa, Gifu, elabora o Esejiman (Orgulho de Ena) com arroz Hidahomare, a variedade nativa de sake da prefeitura, cultivada pela cervejaria em parceria com agricultores locais. A água de nascente macia de Futsumori, que flui naturalmente pela cervejaria sem bombas, produz um honjozo limpo e de fácil apreciação que reflete mais de dois séculos de tradição cervejeira nas montanhas de Gifu.
