Elaborado com água dura extraída de quatro poços conectados ao sistema de nascentes do monte Takanawa, que favorece uma fermentação vigorosa, esta expressão Josen reflete o compromisso desta destilaria, múltipla vencedora do Ouro no Concurso Nacional de Sake, com o patrimônio regional do arroz de Ehime.
