Prensado com a tradicional prensa de madeira fune (barril) ao longo de dois dias e noites, este ginjo nama da Joetsu Shuzo, em Niigata, é polido a 55% e fermentado lentamente para desenvolver um aroma limpo e refrescante com doçura suavemente aveludada. A cervejaria produz sake em Joetsu desde 1804, utilizando água de fonte artesiana profunda em toda a produção.
