Ginginga (galáxia de prata) é o junmai ginjo da Akabu Shuzo que apresenta a variedade de arroz Gin-Otome, cultivada em Iwate, uma linhagem local criada por sua delicada expressão aromática. Reconstruída em Morioka após o tsunami de 2011, a Akabu, sob Kosuke Kudo, elabora este sake com uma sensibilidade limpa e moderna: acidez nítida, suaves aromáticos de melão e um final preciso e seco.
