Yumemunekata Tokubetsu Junmaishu from Izuhonten Co. in Fukuoka uses Yumemunekata, a rice variety developed in Fukuoka prefecture specifically for sake brewing. This locally grown grain gives the sake a regional identity, and the tokubetsu junmai designation ensures no added alcohol, allowing the character of the Fukuoka-bred rice to come through cleanly.
