Nakagumi (middle-run) daiginjo genshu from the Minamo series of Yoshinogawa in Niigata, pressed using only the center portion of each batch for optimal flavor concentration. Brewed with Koshi Tanrei rice polished to 40% and bottled undiluted at 17%, it shows a fragrant ginjo aroma, elegant bitterness, and a smooth swell of sweetness.
