Hiyanama (cold-raw) sake from Yoshinogawa in Niigata, released under the house label and made with Gohyakumangoku polished to 65%. The unpasteurized bottling is stored cold to preserve the fresh character of the new pressing, with the Gohyakumangoku rice providing a clean, dry backbone.
