From Masuda Tokube Shoten, established in 1675 in Fushimi, the brewery that invented modern nigori sake in 1964, the Yanagi, willow tree, expression is the flagship Junmai Ginjo: Yamada Nishiki and Yumenishiki polished to 50%, brewed with Fushimi's soft underground water. International acclaim followed: selected by a four-star New York restaurant and by Lufthansa as a premium in-flight sake. A complex nose of Asian pear, honeydew, lychee, and violet sets the expectation; the palate is refined and light-bodied, true to Kyoto's tanrei character, with a graceful dry bitterness and elegant acidity on the finish that make it equally suited to the dinner table or the contemplative glass.
