Description

Established in 1675, Masuda Tokube Shoten is one of Fushimi's oldest breweries, its name inspired by a nobleman's poem evoking the moon and a katsura tree reflected in still water. The brewery made history in 1964 when its 13th-generation chairman invented modern nigori sake, reimagining what unfiltered brewing could mean for Japanese drinkers. Brewed with Fushimi's celebrated soft subterranean water, this Junmai Ginjo exemplifies Kyoto's elegant tanrei-karakuchi aesthetic: a refined ginjo aroma, silky fine texture, and a crisp balance of subtle fruit sweetness and clean acidity that harmonizes as naturally with Japanese cuisine as it does with modern Western tables.
