Hand-crafted honjozo from Yoshinokawa Shuzoten in Kitakata, Fukushima, a brewery founded in 1870 that retains in-house rice milling and traditional koji-making using antique wooden steamers. All麹 is made entirely by hand, and the brewery's meticulous attention to regional ingredients has earned gold prizes at the National New Sake Awards.
