A junmai ginjo from this small Yosano-cho, Kyoto brewery founded in 1871, using the local Iwai sake rice as the primary grain. The owner-toji produces in very limited quantities, drawing on soft lateral well water and the brewing character of the Tango region in northern Kyoto.
