Description
Shibano-i is one of two labels from this small Yosa-gun, Kyoto brewery founded in 1871, where the owner-toji produces sake in batches numbering in the thousands of bottles annually. The brewery primarily uses the Kyoto-born sake rice Iwai, drawing lateral water from a side well, with products ranging from dry to sweet across its lineup.
