Suminoe Shuzo was founded in 1845 in Ishinomaki, Miyagi, a coastal city that flourished as the principal rice-shipping port of the Sendai Domain during the Edo period, and is named for the deity of navigation enshrined at Osaka's Sumiyoshi Taisha Shrine. The brewery's guiding philosophy is to produce 'clean, soft, and elegant flavored sake,' a mandate pursued by using Miyagi Prefecture yeast and devoting more than 90% of production to proper sakamai (sake-specific rice). The Tokubetsu Junmai draws on premium varieties including Yamada Nishiki from Hyogo and the locally bred Kuranohana, both fermented with underground water sourced from the Kitakami River basin. The result reflects a coastal Miyagi sensibility: refined and mineral-clean, built to complement the region's celebrated seafood.
