Description
Junmai Ginjo from Sugihara Shuzo in Gifu, produced at an extremely small annual volume through entirely hand-crafted brewing. The Suginoi label is known for low-temperature slow fermentation that draws out the fruity, dense character of the brewery's proprietary Ibi no Homare rice. Specific polishing ratio has not been publicly disclosed.

It is a seasonal composition. The year of Sugihara Sake Brewery, which grows its own sake rice "Ibi's Honor", manufactures the sake "Shimi", and sticks to the sales destination. The fifth -generation Keiki Sugihara (Sugihara Yoshiki) has finished the Youth Overseas Cooperation Volunteer, joined Sugihara Sake Brewery, and has been pursuing what he can do. At the beginning of the shooting, it was a story with three pillars of Sake rice mating: Takahashi, farmers: Matsuhisa, Sake Maker: Sugihara, but many people involved in it appeared, and it became a composition this time.
