Kuramitsu Shuzo's ginjo is crafted at the only remaining sake brewery in Oita City, using Ono River subterranean water in combination with the brewery's high-ester yeast. The brewery was founded in 1864 and applies careful hand-crafted methods across its ginjo range to achieve a fragrant, clean style.
