Shimbunshi (しんぶんし), meaning newspaper, is a distinctive label from Chouchin Shuzo in Tsushima, Aichi, whose bottles are wrapped in traditional newspaper as a nod to artisanal simplicity. This Junmai uses Yamada Nishiki polished to 60%, released unfiltered and unpasteurized for vivid, direct character suited to the brewery's food-pairing philosophy.
