Shikaiou (King of the Four Seas) Junmai Ginjo Yume Ginga from Fukui Syuzo in Toyohashi, Aichi, uses 100% Yume Ginga, Aichi Prefecture's proprietary sake rice known for producing sake comparable to Yamada Nishiki in elegance, polished to 55%. Founded around 1912 and now in its fourth generation, the brewery draws on deep underground spring water from the Tenryu River basin (50 to 100 meters depth) and deliberately small-scale production for quality that volume-focused brewing cannot replicate.
