Yamada Nishiki and Gohyakumangoku polished to 70% form the base of this Hyogo tokubetsu honjozo from Izumi Sake Brewery under the Sensuke label. Brewed in Kobe's Nada district, it draws on the minerally hard water that defines the regional brewing style.
