Shinriki rice, polished only to 85% to retain its full grain character, is fermented using the kimoto method at this Kure, Hiroshima brewery. The result is a dense, unpasteurized junmai genshu with ripe fruit aromas, assertive acidity, and a complex layering of sweetness and bitterness, awarded gold at the Kanshu Contest.
