Description

Brewed using a proprietary six-stage addition process in place of the standard three-stage method, this honjozo from Yoshinogawa in Niigata achieves a gentle, lightly sweet character at 65% polishing of Gohyakumangoku rice. The extra fermentation stages allow controlled sweetness development, yielding a mildly off-dry, soft-textured sake.
