Produced in Nagahama, Shiga, on the shores of Lake Biwa, this ginjo is brewed using mineral-rich spring water from the base of Mount Ibuki. The Sato Shuzo brewery, established in 2011, pursues clean, ginjo-style sake with apple-like fruit character, a soft mouthfeel, and a smooth, quick-fading finish.
