Description

Shizukuhime rice from Ehime Prefecture is used in this honjozo genshu from the small Matsuno family brewery in Kita-Uwa-gun. Pressed by the traditional fune-kakeshibori method and drawn as undiluted genshu, it carries 18 percent alcohol with a clean, dry profile fermented with Association No. 9 yeast.

The founder, Masaki Masaki, thought, "For good sake brewing, it is important to have spring water that matches sake." This water, which continues to springs, is nurturing a mellow mouthfeel. From 2001, he turned into sake brewing by family, mainly the current president. Under the motto "quality is the life", it is mainly used with the water from the headwaters of the Shimanto River and the rice produced in Ehime prefecture, and the sake brewing with dust is inherited to this day. Sake "Nodo" was named from the name of a bullfight held by the current president's grandfather. Despite the lightweight, this Nodo has been popular with Yokozuna and gained popularity.
