Sake Mirai rice, developed by the famed Takagi Brewery and considered a high-achieving crossbreed of Yamada Nishiki, is polished to an extreme 33% for this junmai daiginjo. The result is a highly aromatic pour with elegant ginjo fragrance, a smooth and mild entry, and a silky umami finish that shows excellent stability from this difficult-to-source variety.
