Brewed in Nagano's Saku region using locally sourced rice and soft subterranean water from Mount Tateshina, this sake is made entirely by the traditional kimoto method, which the brewery has practiced since its founding. Kimoto fermentation yields a deep, umami-rich body that holds up well both chilled and warmed.
