Kojuku (Ancient Maturity) is a tokubetsu junmai brewed from Gohyakumangoku polished to 60% and aged to develop added depth and complexity beyond a typical fresh-pressed release. Ippongi Kubo Honten, founded in 1902 in Katsuyama, is known throughout Fukui for its kirete umai (sharply dry and delicious) style rooted in Oku-Echizen's cold climate and soft mountain water. The aged character adds a richness that rounds the otherwise crisp Ippongi house profile.
