Description

A daiginjo using Yamada Nishiki polished to 40% from this Nagaoka brewery, the label name drawn from classical calligraphy by Niigata poet Aizu Yaichi. Fermented during the coldest months of the year, it delivers an elegant, refined aroma with a smooth, clean palate and a bright, crisp finish.

Founded for the Ansei period (late Edo period). In the Taisho era, a red brick -made Okura, which can be stored from alcohol preparation, and a hexagonal chimney with a height of 20 meters, which is rare in the country. In 2007, the valuable construction method, historical and cultural value was recognized and registered as a registered tangible cultural property of the country. Currently, the sake brewery is working on handmade sake brewing, led by young brewers.
