Kitaakita Shiboritateshinshu Daiginjo Genshu is a premium winter release from Hokushika Shuzo in Odate, Akita, pressed directly as a freshly squeezed, undiluted raw sake during the severe cold season for immediate limited release. Made from domestic rice polished to 50%, this shiboritate daiginjo captures the intense, forward character of new sake without the smoothing effects of aging or dilution. Akita's harsh winter climate provides near-ideal low-temperature fermentation conditions for daiginjo production, and this seasonal release showcases the prefecture's clean, refined ginjo style at its most vivid.
