Unfiltered (muroka), unpasteurized (nama), and undiluted (genshu), this junmai from Ueda Shuzo delivers the sake in its most direct form straight from the press. Brewed in Nara's Ikoma district with Ikoma spring water, it retains a higher alcohol content (typically 16-17%) and the concentrated, vivid rice flavor that filtering and dilution would otherwise soften.
