Description
Kaze no Mori ALPHA 6 uses Nara-grown Akitsuho rice polished to 66% and the rare Kyokai No. 6 yeast, brewed in collaboration with Aramasa Brewery (the yeast's originating house) using white koji and a bodaimoto starter. The result is a layered, mineral-driven sake with citrus-bright acidity, soft carbonation, and the deep complexity of a shochu-style fermentation in a junmai frame.

In 1998, the wind forest began with the desire to have locals drink raw liquor using local rice.
The name is derived from the place name "Kaze no Mori Pass" in Gosho City. Located at the foot of Mt.

Pour sake into a glass. Transparent lemon yellow. The slightly remaining fermentation carbon dioxide produces foam grains. The fragrance of a faint fruit when approached to the face. If you put it in your mouth, the refreshing scent will come out of your nose, and a voluminous taste will rush. After passing the throat, the sourness that clearly summarizes the mouth clearly.
